Almonds grow inside a shell, which leaves behind a skin on the nut. This skin is removed through a process called blanching, resulting in a smooth, white almond with a milder flavor. The skinned almonds are then ground into a fine powder or flour, known for its subtly sweet taste and distinct “Marzipan” flavor.

One of the great advantages of almond flour is that it is gluten-free, making it an excellent alternative to traditional wheat flours. Its creamy texture makes it perfect for baking, especially in pastries and sweets. However, almond flour is also great for thickening smoothies or sprinkling over cereal to add a touch of sweetness and extra nutrition.

Almonds come in many forms, including blanched, flaked, and whole. Beyond flour, you can also find almond butter, almond paste, and my personal favorite—almond milk, a delicious and nutritious dairy-free alternative to cow’s milk.

Organic almond flour enhances recipes with its rich texture and complex flavor. It’s ideal for both savory dishes, like meats and fish, as well as baked goods, where it gives a moist, dense crumb. Keep in mind, though, that almond-based baked goods are more delicate, so allow them to rest briefly after baking before removing from pans.

Surprisingly, almond flour doesn’t overwhelm dishes with an intense almond flavor, making it a great substitute for refined white flour in a variety of recipes, just as it was used in medieval cooking. Almonds are also a powerhouse of healthy fats that can help reduce LDL cholesterol, promoting healthy skin and hair.

But that’s not all—almonds are also packed with essential vitamins and minerals, such as manganese, copper, and riboflavin, which support energy production and metabolic health. Additionally, almonds are a great source of brain-boosting nutrients like riboflavin and L-carnitine, which can be hard to obtain from other foods.
